Cordon Bleu

This is one I love, but I never think to make. I just get in a rut sometimes and make the same things over and over. This is not one to overlook by any means! I love cordon bleu and this recipe brings me nothing, but satisfaction.


Ingredients
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs
Directions
Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness.
Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

One Skillet Ravioli

This is my husbands favorite dish that I make! He would eat this every night if I made it that often. This is a must try for all you pasta lovers. It's also a low calorie dish so you don't have to feel guilty.

One Skillet Ravioli
Start To Finish 25 min.

Note: If you are using dried Rosemary crush it between your fingers to release and add extra flavor to your dinner.

1 Tblsp Olive oil
1 Large leek, thinly sliced
3 Cloves garlic minced
2 14.5 Ounces cans of stewed tomatoes
1 8 oz can of tomato sauce
1 Tblsp of fresh Rosemary or 1 Tsp dried Rosemary
1/4 tsp crushed red pepper
1 9 oz package of chicken -filled or cheese-filled Ravioli
3 Cups baby spinach
1 Cup shredded mozzarella cheese
1/4 cup Asiago cheese

1. In an extra large skillet, heat oil over medium heat. Add leek and garlic. Cook for 5 minutes, stirring occasionally. Stir in tomatoes, tomato sauce,rosemary and crushed red pepper. Bring to boiling. Stir in ravioli; reduce heat. Cover and simmer for 10 minutes.
2. Stir in spinach. Cover and cook 3 to 4 minutes more until ravioli is tender. Top with cheeses. If desired, garnish with rosemary.

Makes 4 (1 1/2) cup servings
425 cal per serving
62 g total fat(9 g sat fat)
7 g fiber
21 g protein

Slow Cooker Chipotle Chicken Tacos

Last Night I tried a New Recipe and it was very tasty. It is compliments of Martha Stewart and if you have a crock pot you are in business.  I love throwing all the ingredients in the pot and just let it do it's magic. I made the salsa from scratch, just throwing in whatever sounded good.  Click on the link for this wonderful recipe.

Slow-Cooker Chili Chicken Tacos

Serves 4
  • 2 pounds boneless, skinless chicken thighs (about 6)
  • 4 garlic cloves, thinly sliced
  • 1/2 cup prepared tomato salsa, plus more for serving (optional)
  • 1 to 2 tablespoons chopped canned chipotle chiles in adobo
  • 1 tablespoon chili powder
  • Coarse salt and ground pepper
  • 8 hard corn taco shells
  • Cilantro, shredded cheese, lime wedges, and sour cream, for serving (optional)

Directions

  1. In slow cooker, combine chicken, garlic, salsa, chiles, chili powder, 1 teaspoon salt, and teaspoon pepper. Cover; cook on high, 4 hours (or on low, 8 hours).
  2. Transfer chicken to a serving bowl, and shred, using two forks; moisten with cooking juices. Serve in taco shells, with toppings, if desired.

Lemon Raspberry Cupcakes



I am so excited about these cupcakes!! I am not a huge Lemon fan, but these Lemon Raspberry Cucpackes Rock! The Lemon Cupcake is so moist and I love the texutre. I will have to use this one for some of my other recipes. The Raspberry filling is a nice sweet surprise and the Lemon Cream Cheese Frosting ....well...for lack of a more creative term is "The Icing On The Cake"!

Happy Birthday Dyani!!

I am so happy with how this cake turned out. I know our birthday girl will enjoy it. This Two lay Zebra cake is a vanilla buttermilk cake filled with a rasberry filling. The hardest part of making a cake like this is ....I won't get to eat it!

Abbey says her name!

Last night Abbey, Erik and I were laying in bed and Abbey was playing on daddy's iPad. We put our family picture on there and she started saying Mama & Dada. Then we said "say Abbey" and clear as day she said it!! Everyday she is learning a new word. I feel like she is going to start growing up as fast as th speed of light from this point on. I promise to enjoy every minute of it!

Abbey says Mama!

My Daughter has decided that she will now say Mama. She has been playing a game with me for quite some time now and that is the I'm just gonna say Dada every time Mama tries to make me say Mama game. She would laugh and think it's funny, shake her head NO, but she finally gave in and she now says it all the time. It brings such joy to my every time I hear her call for me.
